Mixed Greens with Pears and Raspberries
serves 4
Ingredients
- 2 C mixed greens or arugula
- 2 C pear, coarse chop or sliced
- 1 C raspberries
- 3 T raspberry vinegar
- 2 T apple juice
- 1 T olive oil
- 1 T honey (optional)
- 2 T goat cheese
Instructions
- Whisk together the vinegar, apple juice, olive oil and honey. Season to taste.
- Toss with the greens, then plate. Garnish with the pear, raspberries and goat cheese.
- Serve chilled.
